This Guinness Chocolate Cake with Baileys Cream Cheese Frosting is incredibly moist, decadent and melts-in-your mouth delicious. The best cake a chocolate lover could ever wish for; a fantastic chocolate cake with less than a minute of mixing required and 5 minutes prep time. What’s not to love?
Preheat oven to 325 degrees F, then grease and flour a 10-inch tube pan. Set aside.
In a large bowl mix together sugar, flour, cocoa powder, baking soda, baking powder and salt. Add eggs, buttermilk, sour cream, Guinness, oil and vanilla. Pour in hot coffee. Mix with a spatula or wooden spoon for about 1 or 2 minutes (Batter will be thin). Pour batter into prepared pan.
Bake at 325 degrees F for 45 minutes or until wooden toothpick inserted in center comes out clean. Remove from pan and cool them completely on a cooling rack.
Chocolate Ganache
Melt cream, butter and chocolate chips in a microwave for about a minute , mix until smooth and shiny.
Pour over cake and serve.
Baileys Irish cream Frosting
In a large bowl, mix together the butter and cream cheese with an electric mixer or by hand . Add powdered sugar a cup at a time until smooth and creamy. Slowly pour in the Baileys, adding less or more depending on how boozy you want the frosting to be .
Refrigerate until ready to use . Spread over cake.
Notes
To make these into cupcakes, adjust baking times to 12- 15 minutes or until a wooden toothpick inserted in center comes out clean.
For any leftovers, store it in an airtight container in the fridge for about 1-2 days. Moreover, the unfrosted cake will keep well for about 5 days if stored in an airtight container in a cool place.
