Bake beef bones with oil for 30 minutes.

Add carrots, onions, and garlic, bake for 10 more minutes.

Transfer browned meat and veggies to a pot. Add celery, bay leaves, peppercorns, parsley, thyme, salt, and pepper.

Simmer for 3-8 hours on medium-low without the lid. Strain, refrigerate, and remove solidified fat before using.
