Precook Potatoes and Corn

Preheat oven to 400°F. Spray sheet pan with nonstick spray. Boil potatoes with thyme in salted water until firm (8-10 min). Add corn, cook 3-5 min, drain.

Make the Creole Butter Sauce

Combine butter, creole seasoning, garlic, thyme, and onions in small pan. Saute on medium-low heat for 30-60 seconds, then remove from heat.

Season and Bake

Toss shrimp, potatoes, and corn with Creole butter. Add Andouille sausages and season on a baking sheet. Bake for 12-15 min until shrimp is cooked. Serve with lemon and cilantro.

Grilling and Packets

Divide into 3-4 foil packets, fold edges for heat retention and grill on medium-high heat for 8 min per side. Serve immediately with lemon wedges.
