Carrot Pineapple Cake - A Dessert That's as Delicious as it is Nutritious!

I love carrot cake, but I’ll be the first to admit that not everyone does. But this recipe, even the most die-hard carrot cake “haters” will down a slice and a smile. 😁

Combine dry ingredients, add egg until creamy, add sugar and continue beating for about 3 minutes.

Add butter, sour cream, oil, grated orange zest, vanilla and mix well. Scrape down the sides of the pan.

Dump the flour mixture into the egg mixture. Stir in crushed pineapple, carrots, and raisins. Continue mixing.

Bake for about 40-45 minutes, or until the top is golden brown and a tester toothpick or knife inserted into the center of the cake comes out clean.

Let the cake cool in the pan for 10 minutes. Then, invert it onto a wire rack and let it cool completely.

Let the carrot pineapple cake cool completely before frosting. Sprinkle toasted coconut on top and around the edges of the cake after frosting.
