Chocolate Mayonnaise Cake

Modern Twist on a Timeless Classic Cake Dessert!

My version of the Chocolate Mayonnaise Cake puts a modern spin on a classic recipe that has remained popular for decades due to its exceptional taste.

What makes this cake even better is that it requires fewer than twelve ingredients to make both the cake and frosting, with most being common pantry staples.

What Makes Chocolate Mayonnaise Cake Different?

Mayonnaise may sound odd in a cake, but trust me, it's the secret to a delightfully moist and fluffy texture. It prevents the cake from drying out, without any complex baking techniques.

How to Make Chocolate Mayonnaise Cake

Make the Cake Batter

Whisk flour, baking soda, baking powder, and salt in a bowl. In a separate bowl, whisk cocoa powder and chocolate. Mix hot water and coffee granules in a cup, pour over the cocoa mixture and whisk until smooth.

Make the Cake Batter

Blend mayonnaise, dark brown sugar, and granulated sugar in a large bowl with a hand mixer for 2-3 minutes. Add vanilla extract and mix.

Once mayo, sugars, and vanilla are blended, gradually mix in chocolate mixture and flour mixture, alternating between the two until thoroughly combined.

Make the Cake Batter

Bake the Cake

Evenly divide batter into two greased cake pans and tap to remove air bubbles. Bake for 20-22 minutes or until toothpick comes out clean. Cool cakes in pan for 10 minutes, then transfer to wire racks to cool completely before frosting. Can be prepared a day in advance.

Make the Frosting

Sift cocoa powder and powdered sugar. Add softened butter, milk, vanilla extract, and salt. Use electric mixer to fully combine and set aside. Frost cooled cake and enjoy!
