Delicious Carrot Souffle Recipe

Peel and cut carrots. Cook in saucepan until soft, about 15-20 minutes.

Drain water from carrots. Let moisture dry. Place hot carrots, sugar, baking powder, vanilla in bowl.

Mix in flour, salt, cinnamon, nutmeg using masher. Whisk in eggs, milk, melted butter.

Preheat oven to 350°F. Spray 8x8 dish. Pour mixture into dish, filling ¾ full.

Bake for 30-40 minutes until set and golden.
