Delicious Egg Fried Rice in 10 Minutes: Your New Favorite Quick Dinner 

Break up clumpy rice before cooking. Heat wok or skillet on medium-high with 1-2 tbsp oil. Add rice and soy sauce, stir for 1 min.

Stir in oyster sauce until fully incorporated. Push rice to one side, add eggs and stir to break apart. Quickly stir rice and eggs for 1 minute.

Set aside eggs and rice mixture. Heat 1 tbsp oil in wok or pan, add onions and garlic, stir. Add peas and carrots, stir for 1 min.

Add back rice, stir to combine. Optional: add pepper flakes or hot sauce. Season with salt, pepper, and soy sauce to taste.

Garnish with chopped scallion and serve.
