Floating Island dessert recipe may seem intimidating but never fear!

I just can’t get over how elegant this dessert looks when plated.

This dessert is essentially a meringue “island” floating on a sea of vanilla sauce or custard and drizzled with homemade caramel sauce.

You can make the vanilla and caramel sauce the day before serving floating islands.

Fresh fruit or mint leaves are often used as a garnish to add a pop of color.

The traditional way to cook meringues in this recipe is by poaching. If you are a master chef, feel free to take this route. I prefer baking because it’s so much easier! 🙊

Get creative. You can garnish floating islands with fruit, spun sugar, pistachios, toasted almonds, hazelnuts, or anything else you think will complement the vanilla goodness of this dessert.
