How to Make Lamb Loin Chops

Season lamb loin chops with salt and pepper. Set aside.

Heat Oil – Heat the oil in a large cast-iron or Dutch oven over medium-high heat.

Sear the chops in the hot oil, turning to brown on all sides. Remove and set aside.

Sauté celery, garlic, thyme, rosemary, onion, and bay leaf until lightly browned, then add carrots and tomato paste and stir for a minute.

Pour in wine, stock, Worcestershire sauce, and beef bouillon powder. Lightly season with salt and pepper as needed later.

Return the lamb chops to the pot, bring to a boil, cover with a lid, and place in the oven

Braise the lamb for two hours until tender, checking and adjusting stock and seasonings as needed.

Turn off the oven and remove the pot from heat. Discard the bay leaf and serve.

Recipe Variations

Braise lamb shanks similarly for a more economical option. This recipe can also be adapted for many beef cuts.
