Prepare the Roast. Preheat Oven to 275℉/℃.

Trim Chuck Roast of any visible fat, rinse, and then pat dry with a paper towel.

Truss the Roast – If desired, use twine or string to tie the chuck around; this helps keep its shape but is unnecessary.

Season chuck roast with salt and pepper, rub into cracks and crevasses.

Finishing Touches – Rub Creole seasoning for added flavor, set aside. Coat roast in flour, shake off excess.

Sear the Roast: Heat oil in a cast iron on medium-high, sear beef in a single layer until browned on both sides, about 2-3 minutes per side.

Saute onions, garlic, celery, rosemary, and thyme in remaining oil on medium heat until fragrant, about 2-3 minutes. Add tomato paste.

Deglaze pan with red wine and scrape bottom to remove brown bits.

Add beef broth, Worcestershire sauce, and beef bouillon. Bring to a boil and adjust seasoning with salt, if needed.

Assemble all ingredients in the pot, return the roast, and add carrots and potatoes.

Cover and bake until meat is fall-apart tender (about an hour per pound).
