Potato Croquettes

Perfectly Golden Outside, Soft Inside

Place potatoes in pot, cover with water, salt. 

Boil 18-20 mins till tender. Test with fork. Drain, add to bowl

Add butter, milk, creole seasoning. Mash with fork/potato masher. Mix in onions, cheese, meat. Season; set aside.

Bowl 1: eggs  Bowl 2: flour  Bowl 3: breadcrumbs Shape potato mix around cheese. Coat in flour, egg.

Coat in breadcrumbs. Fry croquettes in hot oil until golden. Drain on paper towels. Garnish with parsley.
