Mix rosemary, thyme, garlic, paprika, cayenne, white pepper, & oil in a bowl.

Season prime rib with salt, pepper, & rub with herb mix. Marinate in fridge overnight.

Take marinated roast out 2 hrs before cooking. Let it reach room temperature.

Line roasting pan, add onions & celery. Preheat oven to 450°F (230℃).

Roast at 450°F (230℃) for 30-45 mins, then reduce heat to 325°F (160℃). Use a meat thermometer for accuracy.

Rest roast for 20-30 mins. Make au jus: skim fat, add stock & red wine. Boil & reduce. Serve with the roast.
