Red Beans and Rice Cooked in an Instant Pot

Rinse dry beans and pick through and discard any foreign object.

Add oil. Sizzle, add sausage, cook, stir until lightly browned. Remove. Add onion, garlic, thyme, celery, bell pepper. Cook until tender.

Seal Instant Pot. Press 'Pressure Cook,' select 'High Pressure,' set time to 35 mins. Allow 10 mins to preheat. Avoid touching lid during cooking.

Wait 20 mins after timer. Release pressure manually. Open lid when pin drops. Check beans. If needed, cook 5 mins more. Discard bay leaves.
