Scrumptious, Delightful Side Dish

Preheat oven to 325℉ (160℃). Spray a baking dish with cooking spray.

Melt 2 tbsp butter, add onion, bell pepper, and Creole seasoning. Sauté for 3-4 mins. Set aside.

Whisk eggs and half-and-half in a medium bowl. Add onion mixture, sugar, salt, corn, cheese, and ½ cup crushed crackers to a large bowl. Mix well.

Pour corn mixture into prepared dish. In a separate bowl, mix remaining crackers and melted butter. Spread over casserole. Add remaining cheese on top.

Bake for 30-35 mins until edges are set and golden brown. Remove from oven.
