Preparing Sweet Potato Puree

Rinse, peel, boil sweet potatoes till tender. Simmer until water evaporates.

Crafting the Soufflé Base

Mix hot sweet potatoes, sugar, yolks, vanilla, milk, butter, flour & spices.

Assembly

Beat egg whites to stiff peaks. Gently fold into sweet potato mixture.

Baking Magic

Pour mixture into greased dish/ramekins. Bake at 350°F for 25-30 mins.
