Victoria Sponge Cake: So light, you'll think it's a dream!

Put eggs in a large mixing bowl and beat them well.

Combine sugar, flour, butter. Mix well. Then add baking powder, salt, vanilla, milk

Blend with a mixer until fully combined. Scrape bowl sides.

Divide batter into greased cake pans evenly. Tap to remove air bubbles.

Bake at 325℉/163℃ until tester comes out clean, 22-25 mins or until golden and cake springs back. Cool on wire rack.

Beat butter, powdered sugar, milk, and vanilla extract until smooth and fluffy. Adjust consistency with more powdered sugar or milk, as needed.

Buttercream Filling

Place one cake on a stand/plate, spread jam, add buttercream, top with other cake and press lightly.

Sponge Cake Assembly

Dust powdered sugar and add berries of your choice for decoration, if desired.

Slice and serve or refrigerate until ready to serve.
