Mango Fool

An easy dessert made with sweet, ripe mangoes and flavored whipped cream. A simple and quick summer treat to cool off during those hot days! Incredibly satisfying!

Ingredients

  • 3-4 ripe mangoes, peeled, coarsely chopped, reserving some chunks for garnish
  • 1 lime, zest and juice
  • 2-4 tablespoons (24-48g) sugar
  • 1 cup (240ml) heavy cream
  • 1 teaspoon (5ml) vanilla extract or almond flavor
  • ¼ teaspoon (1g) nutmeg

Instructions

  • Peel and chop the mangoes.
  • Reserve about ½ cup or more of chopped mangoes for garnish and assembling.
  • Blend the remaining mangoes in a blender or food processor with the lime juice and 2-3 tablespoons of sugar—adjust sugar to your preference. Set aside.
  • Combine heavy cream with about 1 tablespoon of sugar, lime zest, and vanilla using an electric mixer fitted with the whisk attachment. Add additional lime juice, nutmeg, and sugar to taste. Mix on medium-high speed until peaks form.
  • Divide half the mango purée among the 6 glasses or bowls, layer each with a dollop of whipped cream, and repeat with the puree and whipped cream until everything is used. Top with the mango cubes and enjoy.

Notes

  • The riper the mangoes, the sweeter your fool will be.
  • Grinding the sugar in the blender before making the whipped cream helps it dissolve faster for a smoother topping.
