Mashed up overripe bananas mixed with whole wheat flour, brown sugar, nutmeg, and vanilla, and then fried until golden brown. Perfect for breakfast, afternoon snacks, or party food!

Ingredients

  • 4 large bananas (1½ cups mashed bananas)
  • cups whole wheat flour
  • 2 teaspoons baking powder
  • 2 tablespoons brown sugar
  • ½ teaspoon nutmeg
  • ½ teaspoon vanilla extract
  • Oil for deep frying

Instructions

  • Mash bananas with a spoon or puree them in a food processor or blender.
  • In a medium bowl, mix the mashed bananas, whole-wheat flour, sugar, baking powder, and salt. Mix well to the consistency of a creamy batter.
  • Finally, add the nutmeg and vanilla. Let it rest for 10 minutes.
  • Heat a large cast iron skillet with oil ½ inch deep on medium-high heat (375℉/190℃) until hot but not smoking.
  • Scoop up the batter and fry in batches, turning once, until golden brown (about 5 minutes). Don't overcrowd the pan, as it will cause the fritters to become soggy and absorb excess oil.
  • Remove the fritters with a slotted spoon and drain them on paper towels.
  • Serve warm.

  • Yes, you can make these gluten-free. Use your favorite gluten-free all-purpose flour and proceed with the recipe. Bananas are a perfect ingredient for gluten-free goodness.
  • You can freeze the fried whole wheat accra banana for later (up to three months in a freezer-safe ziplock bag). You can reheat them in the oven or air fryer.
