Papaya Fool

A tasty, guilt-free dessert you can happily finish in one sitting. Tofu, coconut cream, milk, lime, and a tad brown sugar have never been so delicious. A great summer treat or party dessert to satisfy your sweet tooth craving!

Ingredients

  • 2-3 cups diced papaya (2-3 pounds)
  • 1 16-ounce package soft tofu
  • ¼ cup coconut cream (sub with coconut milk and a tablespoon of coconut powder)
  • 2-3 tablespoons brown sugar
  • 2 teaspoons lime juice, freshly squeezed
  • 1 teaspoon vanilla extract (optional)

Instructions

  • Peel the papaya, cut it into small pieces, and place them in a food processor. Blend until coarsely puréed. Set aside.
  • Place the tofu and coconut cream in a food processor. Process until creamy, then add sugar, lime juice, and vanilla. Stir or pulse to combine.
  • In a large bowl, gently fold the papaya puree into the creamy tofu blend until blended. Garnish with mint and serve immediately.

Notes

  • Select a ripe papaya (reddish orange). It should feel heavy for its size, and if it's a little less ripe than ideal, let it ripen at home to bring out its natural sweetness. When fully ripe, it should be reddish orange inside—sweet, juicy, and soft.
  • Have all your ingredients cold for a more refreshing dessert. Or let it chill in the fridge for an hour or two before serving.
