Equipment

  • Small bowl

Ingredients

  • 4 tablespoons Olive oil 
  • 2 tablespoons lemon juice 
  • 2-3 tablespoons fresh mint , chopped
  • ½ cup tomatoes , diced
  • ½ cup cucumber , diced
  • ½ cup red onion , diced
  • ½ cup Kalamata olives , halved
  • ½ cup Feta cheese
  • salt and pepper to taste 

Instructions

  • In a small bowl, whisk in olive oil and lemon juice. Then add mint- stir to combine. Set aside until ready to be used. You may refrigerate overnight.
  • Place tomatoes, cucumber, red onion, kalamata olive, and feta cheese in a large bowl.
  • Pour dressing over mixed vegetables, toss to combine – season with salt and pepper, if desired.
  • Serve immediately.
