Instructions

  • To melt chocolate, microwave in 15-second intervals, stirring every time until melted.
  • In a medium saucepan, combine sugar and eggs until well combined. Cook over low heat, constantly stirring until sauce passes back of spoon test. (Using one finger, wipe a straight line on the back of the spoon. If the sauce stays in place and a clean line is formed, it is ready.) Remove from heat.
  • Add chocolate and vanilla. Mix well. Cool to room temperature, stirring occasionally.
  • In a medium mixing bowl, cream butter until fluffy. Add chocolate mixture.
  • In a separate bowl, beat heavy cream with an electric mixer until it thickens. Add powdered sugar and beat until peaks form.
  • Fold in chocolate mixture.
  • Pour into pie shell and refrigerate for at least 8 hours. Top the pie with homemade whipped cream and shaved chocolate. Serve cold.

Notes

  • Keep leftovers refrigerated for up to 4 days. 
  • To make the chocolate whipped cream frosting, add 1-2 tablespoons cocoa powder to the homemade whipped cream recipe.
