In a medium saucepan, combine sugar and eggs until well combined. Cook over low heat, constantly stirring until sauce passes back of spoon test. (Using one finger, wipe a straight line on the back of the spoon. If the sauce stays in place and a clean line is formed, it is ready.) Remove from heat.
Add chocolate and vanilla. Mix well. Cool to room temperature, stirring occasionally.
In a medium mixing bowl, cream butter until fluffy. Add chocolate mixture.
In a separate bowl, beat heavy cream with an electric mixer until it thickens. Add powdered sugar and beat until peaks form.
Fold in chocolate mixture.
Pour into pie shell and refrigerate for at least 8 hours. Top the pie with homemade whipped cream and shaved chocolate. Serve cold.
Notes
Keep leftovers refrigerated for up to 4 days.

If you don't have time to make your own, you can use a store-bought crust. I sometimes switch it out with an Oreo crust. If you are gluten-free, you can replace it with your favorite gluten-free pie crust.
