Creamy, cheesy, and surprisingly simple. This hearty casserole with real corn, cheese, and your favorite buttery crackers pairs easily with most main dishes. Hurry up and make some now because this dish flies faster than you can take your first bite.

4 tablespoons melted butter, divided in half 1 medium onion, diced 1 bell pepper, diced 1 teaspoon Creole seasoning 3 eggs 1 cup half-and-half (or half cream and half milk) 4 cups corn kernels, fresh, canned, or thawed from frozen 1 tablespoon granulated sugar 1 teaspoon salt 1 cup shredded cheddar cheese 1½ cups buttery crackers, coarsely crushed (such as Ritz) 2 tablespoons parsley, chopped cooking spray
Preheat the oven to 325℉ (160℃). Spray a 2-quart baking dish with cooking spray.
Melt two tablespoons butter in a small fry pan, then add onion, bell pepper, and Creole seasoning. Sauté for 3-4 minutes. Set aside.
In a medium bowl, whisk the eggs and half-and-half.
Then add the onion mixture, sugar, salt, drained corn kernels, cheddar cheese, and ½ cup of crushed crackers to a large bowl. Thoroughly mix.
Pour the corn mixture into the prepared casserole dish.
Mix the remaining crackers and two tablespoons of melted butter. Spread it over the corn casserole. Add the remaining shredded cheese on top.
Bake for 30-35 minutes or until the edges of the casserole are set and golden brown. Remove from the oven.
Top it with parsley, and enjoy.
You can make this a main course with protein, like crumbled bacon, diced ham, or cooked and crumbled sausage.
Top your scalloped corn with panko breadcrumbs, saltines, club crackers, fried onions, or whatever you have on hand instead of Ritz crackers .
