Bammy is a traditional Caribbean dish made from cassava flour. It is a versatile dish that can be eaten for breakfast, lunch, or dinner.

Using a cheesecloth or kitchen cloth, squeeze the heck out of the grated cassava. Place in large bowl, add salt and sugar. Mix well

Divide mixture into 8, form circles. Fry in oiled pan, flatten with spoon in circular motion. Oil all parts.

Cook 3-4 mins each side till lightly browned. Do in batches. Soak bammy in coconut milk for 15-20 mins.

Remove and lightly pat dry using a clean cloth or paper napkin Refry or grill on both sides for another 4-5 mins until golden brown or according to preference.

Tips for making bammy:

Use fresh cassava flour for the best results. Knead the dough for at least 5 minutes to make it smooth and elastic. Cook the bammy in hot oil until they are golden brown.
