Wash and air-dry chicken legs on a single layer on a cookie sheet for 3+ hours in the fridge. Proceed with spices.

To bake, preheat oven to 425°F. Season chicken in a bowl with spices and oil.

Toast to coat chicken evenly.

Line baking pan with foil and wire rack. Place chicken legs in single layer to bake, letting oil drip to pan.

Bake chicken legs for 45-50 minutes until crispy and cooked, rotating halfway through (20 minutes).

Remove and serve with your favorite chicken sauce or African pepper sauce.

For extra crispy chicken, preheat baking sheet in oven, then bake chicken legs on hot sheet as directed. If no cayenne pepper, use chili powder or cumin. Serve with favorite sides like roasted veggies, mashed potatoes or rice
