Preheat oven to 400°F/205℃. Place rack in the middle position.
Line baking sheet with parchment paper. Lightly spray with cooking oil.
Wash and slice potatoes into ¼-½ inch rounds. Rinse under water to remove excess starch.
Soak sliced potatoes in cold water for 5 minutes. Drain and pat dry.
Coat potato slices with olive oil, Italian seasoning, paprika, garlic powder, onion powder, salt, and pepper.
Arrange potatoes on baking sheet. Bake at 400°F/205℃ for 40-45 minutes, flipping halfway.
