Peel, wash, and chop sweet potatoes into 1-inch cubes. Place them in a pot, barely covering with water.
Cook covered over medium-high heat for 15-20 minutes until potatoes easily break with a fork. Transfer to a bowl and mash until smooth.
In another bowl, whisk flour, brown sugar, baking powder, baking soda, salt, cinnamon, orange zest, and pumpkin pie spice until well mixed.
In a separate bowl, whisk eggs, buttermilk, melted butter, and mashed sweet potatoes until fully combined.
Combine wet and dry mixtures. Don't overmix; some lumps are okay. Let it rest for 10-15 minutes.
Preheat the waffle iron for 6-7 minutes, then spray with nonstick spray.
Pour batter, cook until golden (5-7 mins). Repeat, and serve with syrup, butter, pecans, and berries. Enjoy! 🍁🥞
