When summer veggies abound, I love to stock up on squash. I believe squash is a highly underrated vegetable.

It has a lovely savory taste that spices up beautifully with the right seasonings, and the texture is soft and scrumptious. What’s not to love? 💛

Rinse squash, dry. Slice into ¼ inch rounds. Whisk buttermilk, egg, and hot sauce. 

Mix flour, cornmeal, seasonings. Dip squash in buttermilk mixture, then cornmeal. Place on baking sheet. Rest for 2-3 mins to let coating stick.
