Burgoo recipe Ingredients

Heat vegetable oil in a large soup pot over medium-high heat (8 quarts or larger).

Brown the meat in batches, making sure not to overcrowd the pan. Sprinkle each batch with salt and pepper for extra flavor.

Reduce the heat to medium and add onions, thyme, bell pepper, carrots, celery, and garlic to the pot. Sauté them until fragrant.

Add tomatoes, bay leaves, and bouillon powder. Stir to combine and let them cook for a couple of minutes.

Return the browned meat and chicken to the pot. Pour in broth, water, Worcestershire sauce, and vinegar. Stir everything together.

After 2 hours, remove the chicken from the pot, shred it, and discard the skin if desired. Return the shredded chicken to the pot.

Add potatoes, corn, and lima beans to the pot. Let everything simmer for an additional 30-40 minutes until the potatoes are tender. Season with salt and pepper to taste. Adjust the thickness by adding more water if needed.
