Preheat oven to 350°F/177℃. Line crust with parchment paper, add dried beans. Bake for 5-6 mins, then cool.
Rinse, peel, and cut sweet potatoes. Boil until tender, drain, simmer until dry. Mash in a mixing bowl.
Add softened butter, white & brown sugar, eggs, evaporated milk, nutmeg, ginger, cinnamon, salt, vanilla. Mix well.
Pour the sweet potato mixture into the prepared pie crust.
Bake the pie in the oven for 40 minutes or until the top is golden brown and a skewer comes out clean.
