This simple crab salad is fresh and vibrant with chunks of celery and a tangy, spicy mayo dressing. It's great for a summer lunch or dinner and even works as an appetizer.

1 pound (450g) imitation crab meat ¼ cup (40g) onion, diced 1-2 green onion diced ½ cup (50g) celery, diced ⅓-½ cup (75-115g) mayonnaise 1 teaspoon (5g) Dijon mustard ½-1 teaspoon (2-5g) Creole seasoning ½ lemon salt and freshly ground pepper to taste ½ teaspoon (1-2g) dill
In a large bowl, mix the crab, onions, green onions, and celery.
In a smaller bowl, mix the mayonnaise, mustard, Creole seasoning, and lemon juice. Chill until ready to use.
Next, add the mayonnaise mixture to the bowl of the crab mixture and mix until thoroughly combined—season to taste with salt and pepper.
Garnish with dill and serve on a baguette with lettuce and avocados or with crackers. The choice is yours.
Refrigerate an hour before serving because this tastes best chilled.
Add more mayonnaise for a creamier salad texture.
Keep the dressing and salad ingredients separate until just before serving for a fresh, crunchy bite to your salad.
