Waldorf Salad – a delightful and easy fruit and nut salad served on a bed of lettuce as a light appetizer or a meal on its own. A great dish to welcome the Spring season!

  • ¼ cup (61 g) Greek yogurt
  • ¼ cup (58 g) mayonnaise
  • 2-3 tablespoons (25-37.5 g) sugar or honey
  • ¼ teaspoon (1.25 g) salt
  • 1 cup (245 g) pineapple , diced
  • 2 Fuji apples , cored and chopped
  • 1 cup (151 g) red seedless grapes , sliced in half (or 1/4 cup of raisins)
  • 1 cup (101 g) celery , thinly sliced
  • 1 cup (117 g) chopped, slightly toasted walnuts, or pecans

  1. In a medium bowl, mix yogurt, mayonnaise, sugar and salt. Stir to combine until smooth and creamy.

  2. Then on a bigger size bowl, throw in diced pineapple, apples, grapes, celery and walnuts.

  3. Pour in the mayonnaise mixture and stir well to coat everything. Chill in the fridge for at least an hour. Serve it in a bowl or on a bed of lettuce.
