Banana Bread Muffins

Ingredients

  • 2 large or 128 g banana or 1 cup
  • 2 large eggs
  • ¼ cup or 50 g granulated sugar
  • ¾ cup or 75 g brown sugar
  • cup or 33.3 g sour cream or yogurt
  • 1 ½ teaspoon or 7.5 ml vanilla extract
  • 2 cups or 250 g all-purpose flour
  • 1 teaspoon or 4 g baking powder
  • 1 teaspoon or 4.8 g baking soda
  • ½ teaspoon or 2.95 g salt
  • ½ cup or 4 oz brown butter

Instructions

  • Preheat the oven to 400 °F. Line a muffin pan with paper liners. 
  • In a small bowl, whisk together the mashed bananas, eggs, sugar (brown and white) sour cream, and vanilla extract. 
  • In another bowl, combine the flour, baking powder, baking soda, and salt. 
  • Gradually add the wet ingredients to the bowl of dry ingredients and whisk with a spatula until thoroughly mixed. 
  • Pour in the brown butter and thoroughly mix, then scrape down the sides. 
  • Pour the mixture into prepared muffin tin pan. Bake for about 12 minutes, or until a toothpick inserted comes out clean. 
  • Let it rest for 10 minutes before serving. 

Notes

  1. You may refrigerate leftover muffins for 2-3 days or freeze them, covered tightly with an aluminum foil, for 3 months.
  2. Make sure that you let the muffins cool down before storing them.
  3. To reheat microwave refrigerated muffins for 30-35 seconds on high. Or reheat the foil-wrapped muffins on a baking sheet in a preheated oven at 400F for 10-15 minutes.
