How to Make Passion Fruit Juice

Passion Fruit Juice 20 medium-sized passion fruit, About 2 cups of puree with seeds and 1 cup without seeds 4 cups (960mL) water 1 ½ cup (360mL) simple sugar syrup ice cubes mint leaves, optional Simple Sugar Syrup 1 cup (200g) sugar 1 cup (237mL) water
Carefully cut each passion fruit in half.
Use a spoon to scoop the passion fruit flesh and seeds into a bowl.
Transfer to a blender.
Add 2 cups of water and pulse at your lowest setting. Be careful not to blend so much that your seeds become finely ground.
Pour the juice through a fine-mesh sieve into a pitcher or jar and discard the seeds if you like.
In a medium saucepan, combine sugar and water and place over medium heat.
Cook for about 2-4 minutes while stirring until sugar is dissolved.
Remove the pan from the heat and let it cool, as it cools it slightly thickens up.
Add simple sugar syrup and water to your passion fruit juice. Stir until everything is fully incorporated.
Adjust to your desired consistency and sweetness with the rest of the water and syrup.
Serve with ice and garnish with mint leaves and passion fruit seeds.
Choose ripe passion fruits for sweeter juice. They should be plump, even-colored, and slightly wrinkled.
Adjust water and sweetener according to your taste.
Use chilled water.
