Ingredients

Cobbler

  • cups (150g) all-purpose flour, spooned into a measuring cup and leveled off with a knife
  • ½ teaspoon (2.5g) salt
  • teaspoons (7g) baking powder
  • 1 teaspoon (5ml) vanilla extract
  • ½ cup (100g) granulated sugar
  • ½ cup (120g) unsalted butter
  • 1 cup (240ml) buttermilk (you can replace with milk)

Strawberry Mixture

  • ¾ cup (150g) sugar
  • 1½-2 pounds (750-900g) strawberries
  • 1 tablespoon (15ml) lemon juice
  • 2 teaspoons (4g) lemon zest, grated
  • tablespoons (11g) cornstarch
  • Vanilla ice cream (optional)

Instructions

Cobbler

  • Preheat the oven to 350°F/177℃ and spray a 9x13 baking dish or a 10-inch cast-iron skillet with nonstick cooking spray.
  • Mix flour, salt, baking powder, and sugar in a medium bowl.
  • Whisk in the buttermilk and vanilla until combined, and follow with the melted butter, scraping down the sides of the bowl as you whisk.
  • Pour the cobbler mixture into the prepared baking dish.

Strawberry Mixture

  • Hull and cut strawberries in half and place in a large bowl together with lemon juice, lemon zest, and cornstarch. Toss to combine thoroughly.
  • Transfer the strawberry mixture evenly over the top of the batter.
  • Bake for 35-40 minutes until the cobbler is cooked.
  • Remove it from the oven to cool slightly before serving it with ice cream or whipped cream. Enjoy!

Notes

  • You can replace the buttermilk with an equal amount of milk.
  • High-quality ingredients will always elevate your cooking. Using good, ripe strawberries fresh from the market will add so much flavor to your cobbler.
