Ingredients

  • 2 pounds (980g) russet potatoes (or frozen potato fries)
  • 1-2 teaspoons cornstarch (optional)
  • 1 tablespoon (15ml) melted butter
  • 2 tablespoon (30ml) olive oil
  • 1-1½ teaspoons (7-10g) salt
  • 2 tablespoons Creole or Cajun seasoning

Instructions

  • Preheat oven to 425℉/218℃.
  • If using frozen potato fries skip to step 6.
  • Scrub potatoes, then clean and cut them into the desired shape – the thinner the cut, the less time to cook but make sure they are a uniform size for even cooking.
  • Soak the potatoes in a bowl of cold water for 30 minutes to get rid of excess starch.
  • Drain and dry.
  • In a large bowl, mix the potatoes with cornstarch until thoroughly combined. Shake off the excess cornstarch. Add the melted butter and oil and toss to combine. Then season with homemade creole seasoning and salt.

  • Arrange the fries in a single layer over a baking sheet. You may have to use two, depending on the quantity.
  • Bake the potatoes for 25-35 minutes, flipping them every 10 minutes with a spatula until they’re evenly browned and crispy, according to your preference. After 25 minutes, you have to check on them every 5 minutes.
  • Allow it to cool slightly and serve immediately with ketchup or your favorite seasoning.

Notes

  • Pat your potatoes dry with a paper towel and cut them into equally sized strips so they cook evenly.
  • To help them get crispy, arrange them in an even layer with space between them without piling up on each other.
  • Toss the fries and the seasonings until the potatoes are evenly coated before sticking them in the oven.
