2 cups jasmine rice 2 tablespoons coconut oil or melted butter 1 teaspoon salt 1 teaspoon brown sugar (optional) 1½ cups coconut milk 1 cup water or coconut water ¼ cup toasted shredded coconut (unsweetened) cilantro or lime for serving (optional)
Wash rice until water runs clear (3-4 times). Drain in a sieve or colander.
Add the rice to a medium pot on medium heat.
Add the coconut oil (or melted butter) and quickly stir until the rice is coated.
Then add salt, sugar, coconut milk, and water, and turn the heat to high.
Bring the rice to a boil, uncovered.
Cover, reduce the heat to low, and simmer until rice is tender and liquid is absorbed (10-12 minutes).
Take it off the heat and let it sit for 10 minutes.
Fluff the rice and serve it garnished with toasted coconut flakes, cilantro, and lime.
Rinse the rice well before cooking to remove excess starch, which can cause the rice to be overly sticky.
Be patient when letting the rice rest after cooking. This step lets the rice absorb any remaining liquid and become perfectly fluffy.
