Ingredients

  • 2 tablespoons olive oil
  • 2 pounds cubed stew meat
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon Creole seasoning (optional)
  • 4 tablespoons butter
  • cups onion, minced
  • 2 teaspoons garlic, minced
  • 2 teaspoons fresh thyme, minced
  • ½ cup white wine
  • 2-3 cups beef broth
  • 1 teaspoon bouillon powder
  • 1 tablespoon Worcestershire sauce
  • 4 tablespoons all-purpose flour
  • 1 cup water
  • salt and black pepper to taste
  • Cooked rice (about ½ a cup per serving)

Instructions

  • Heat the olive oil and butter in a large Dutch oven or heavy-bottomed pot over medium-high heat.
  • Season the stew meat with salt, pepper, and Creole seasoning (if using).
  • Add stew meat and sear until browned on all sides, about 2 minutes per side.
  • Add the onion and cook until softened, 7-8 minutes, then add garlic and thyme and cook for another minute.
  • Deglaze with white wine and let it cook down for about a minute.
  • Add the beef broth, bouillon powder, and Worcestershire sauce. Bring to a boil, then reduce heat to low and simmer for 30-40 minutes or until the meat is tender.
  • In a small bowl, whisk together the flour and water.
  • Add the flour mixture to the pot and cook, stirring constantly, until the sauce has thickened, about 2 minutes.
  • Adjust the consistency with water or broth and adjust the seasoning to taste.
  • Serve over cooked rice and enjoy.

Notes

  • Make sure you get a good sear on your beef tips to seal in the juices and flavor.
  • Use tougher but more flavorful beef. Follow the recipe, but simmer it for 2-3 hours. That's so the connective tissue breaks down for an awesome melt-in-your-mouth stew.
  • If you need a gluten-free version, make a cornstarch slurry instead. Mix two tablespoons of cornstarch into 4 tablespoons of cold water and add it to your gravy instead of the flour.
