Stuffed Strawberry Cream Cheese
Cheese Stuffed Strawberries (Reduced Calorie) - a crowd-pleasing and simple dessert made with strawberries stuffed with reduced-calorie cream cheese and chocolate. A very straight-forward and easy to put together dessert!
Servings 4 -5 people
- 1 pound large strawberries
- 8 oz. cream cheese , softened (can use 1/3 less fat)
- 2 Tablespoon powdered sugar
- 2 Tablespoon splenda or stevia , omit and use 2 tbs powdered sugar
- ½ teaspoon vanilla extract
- ½ teaspoon almond extract
- Dash of nutmeg
- 4 ounce chocolate , semi-sweet or milk
Thoroughly wash and rinse strawberries.
Cut off the top of the strawberries. Use paring knife or melon baller to hollow out a small hole in the center of the strawberries.
To be on the safe side slightly cut the bottoms off so that they can sit flat in an upright position.
Beat or mix together the cream cheese, sugar, vanilla and almond extract. Place into a piping bag with a star tip. Pipe into each strawberry.
Melt chocolate in a small bowl in the microwave, stirring frequently every 20-30 seconds. So that is doesn’t scorch or burn. It usually takes about 2 minutes.
Stir the chocolate continuously until it is smooth, shiny, and completely melted.
Spoon chocolate into a plastic bag and cut a small hole in the corner or just use a skewer or tooth pick to drizzle the melted chocolate over the strawberries.
Refrigerate until serving time.
