Ingredients

  • 1-2 tablespoons (14-28ml) olive oil
  • 2 teaspoons (10g) minced garlic
  • 1-2 teaspoons (2-4g) onion powder
  •  1 14.5-ounce can diced tomatoes, undrained (about 1¾ cup)
  •  6 ounces (170g) tomato paste  (¾ cup)
  • 1-2 teaspoon (4-8g) sugar
  • 2 teaspoons (4g) Italian seasoning
  • 1-2 tablespoons (1-2g) basil (for additional flavor)
  • 1 teaspoon (2g) pepper flakes (optional)
  • salt and freshly ground pepper to taste

Instructions

  • In a medium saucepan, add the olive oil and garlic and cook over medium heat for about a minute or until fragrant.
  • Add the tomatoes, tomato paste, onion powder, sugar, Italian seasoning, basil, and pepper flakes to the pan. Stir well to combine. Next, add salt and some freshly ground black pepper to taste.
  • Bring the sauce to a boil. Reduce heat to low and simmer. It should take 20-30 minutes to reach the desired thickness and depth of flavor, but that can change depending on your stove, altitude, and climate.
  • Let it cool and store it for later, or whip up your favorite pizza dough recipe and spread the sauce on it.

Notes

  • Omit sugar if desired; it will be slightly acidic but still taste great.
  • Double or triple this recipe so you have pizza sauce for freezing.
  • For the best flavor, use high-quality ingredients. That goes for the tomatoes, herbs, and olive oil.
  • Letting the sauce cool slightly before spreading it on the pizza dough prevents the dough from becoming soggy and helps the sauce set properly during baking.
