Old Fashioned Green Beans and Bacon

Ingredients

  • 1-1½ pounds (450-600g) fresh green beans, trimmed
  • 5-6 slices thick-cut bacon, chopped
  • 5-6 cloves garlic, sliced
  • ½ onion, chopped
  • 1-2 teaspoons (4-9g) Creole seasoning
  • salt and pepper to taste
  • Parmesan (optional)

Instructions

  • Bring a pot of water to a boil, add green beans, and let it cook for 4-5 minutes. Remove beans from boiling water immediately and add to ice water to stop cooking. Drain and set aside. This step can be done in advance and refrigerated to save time.
  • Place saucepan or skillet on medium-high heat, add bacon, and saute until crispy (6-7 minutes). Remove all but 2-3 tablespoons of the bacon grease.
  • Add sliced garlic and onion, and saute for 2 minutes. Then add green beans and Creole seasoning, stirring for another 3-5 minutes.
  • Remove from the pan and optionally top with freshly grated parmesan cheese.

Notes

  • Frozen green beans work fine. They've been blanched already, so they usually cook faster.
  • Don't forget to save the bacon drippings for gravy
  • Feel free to replace the bacon with ham, sausage, or a vegan substitute
