Bacon-Wrapped Asparagus

Crispy, savory, and oh-so-yummy, this bacon-wrapped asparagus is super quick and easy. Add it as a side to your favorite protein, or enjoy it as it is. Everyone will love this simple recipe!

Ingredients

  • 1½-2 pounds (1-1.5k) asparagus, ends trimmed
  • 8-10 slices bacon, thick or regular cut
  • 2 teaspoons (5.5g) garlic, minced
  • 2 teaspoons (4g) Italian seasoning
  • ½-1 teaspoon (3-7g) salt, to taste
  • ½ teaspoon (1g) pepper, to taste
  • 1-2 tablespoons (15-30ml) olive oil 
  • Parsley for garnish (optional)

Instructions

  • Preheat oven to 400℉/200℃.
  • Line a large baking sheet with parchment or foil paper. Set aside. 
  • Place the bacon in a single layer on a prepared baking sheet. 
  • Bake bacon in the oven for 12-15 minutes; cooking time will vary depending on the thickness of the bacon. The idea is to cook the bacon halfway.
  • While bacon is cooking, make the spice mix. Mix minced garlic, Italian seasoning, salt, pepper, and oil in a medium bowl. 
  • Remove the bacon from the oven, drain the grease, and let it cool slightly, enough for you to be able to handle it. Discard parchment paper and replace it with a clean one. Set the baking tray aside. 
  • Pick 3-4 stalks of asparagus, place them on a bacon strip, wrap them around the asparagus, and tuck the ends underneath.
  • Place the bundles on the baking sheet with the bacon seam-side down. Repeat this process until all the asparagus has been used up.
  • Brush the spice mixture over the asparagus and bacon, making sure every inch is covered with the spice mixture.
  • Bake wrapped asparagus bundles for 15-20 minutes or until asparagus is cooked to your preference. Time will vary depending on the thickness of the asparagus.  
  • Remove from the oven and garnish with parsley. Serve immediately. 

Notes

  • Arrange the asparagus bundles on a wire rack over a baking sheet to keep the bacon crispy.
  • Avoid overlapping the bacon edges too much when wrapping the asparagus bunches. That helps the bacon cook evenly and crispy.
  • It's easy to overcook asparagus. Gently pierce it with a fork. When done, it pierces easily with a little resistance.
