Preheat oven to 375°F (190°C).
Combine onions and garlic in a small microwave-safe bowl and microwave for a minute or two until the onions are soft and translucent. Set aside.
In a medium bowl, add the ketchup, lemon juice, chili, brown sugar, honey, Worcestershire, mustard, paprika, molasses, pepper flakes, and celery seeds. Then, add the onions and garlic mixture.
Mix until thoroughly combined; set aside.
In a small bowl, mix the olive oil, garlic and onion powder, paprika, salt, and pepper.
Arrange your pork chops on a baking sheet lined with foil or parchment paper. Brush them on both sides with the olive oil mixture.
Then, brush the pork chops generously with ⅔ of your barbecue sauce. Reserve the rest for basting later.
Place the pork chops in the preheated oven and bake for 20 minutes.
After 20 minutes, remove the pork chops from the oven and brush them on both sides with the BBQ sauce.
Return the pork chops to the oven and bake for an additional 10-15 minutes or until the internal temperature reaches 145°F (63°C).
Broil for the last 2 minutes before you take it out of the oven.
Once the pork chops are cooked through, remove them from the oven and let them rest for a few minutes before serving.
