Ingredients

BBQ Pork Chops

  • 1 cup BBQ sauce (your favorite store-bought BBQ sauce or homemade—recipe follows)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 bone-in pork chops

Homemade BBQ Sauce

  • 1 tablespoon minced onion
  • ½ teaspoon minced garlic
  • 1 cup ketchup
  • 2 tablespoons lemon juice
  • ½ tablespoon chili powder (optional)
  • 2 tablespoons brown sugar
  • 1 tablespoon honey
  • ½ tablespoon Worcestershire sauce
  • ½ tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • ½ tablespoon molasses
  • ¼ teaspoon crushed pepper flakes (optional)
  • ¼ teaspoon celery seeds

Instructions

  • Preheat oven to 375°F (190°C).
  • Combine onions and garlic in a small microwave-safe bowl and microwave for a minute or two until the onions are soft and translucent. Set aside.
  • In a medium bowl, add the ketchup, lemon juice, chili, brown sugar, honey, Worcestershire, mustard, paprika, molasses, pepper flakes, and celery seeds. Then, add the onions and garlic mixture.
  • Mix until thoroughly combined; set aside.
  • In a small bowl, mix the olive oil, garlic and onion powder, paprika, salt, and pepper.
  • Arrange your pork chops on a baking sheet lined with foil or parchment paper. Brush them on both sides with the olive oil mixture.
  • Then, brush the pork chops generously with ⅔ of your barbecue sauce. Reserve the rest for basting later.
  • Place the pork chops in the preheated oven and bake for 20 minutes.
  • After 20 minutes, remove the pork chops from the oven and brush them on both sides with the BBQ sauce.
  • Return the pork chops to the oven and bake for an additional 10-15 minutes or until the internal temperature reaches 145°F (63°C).
  • Broil for the last 2 minutes before you take it out of the oven.
  • Once the pork chops are cooked through, remove them from the oven and let them rest for a few minutes before serving.

Notes

  • Use bone-in pork chops for more flavor and juiciness.
  • Don't overcook the pork chops, as they can become dry and tough. A meat thermometer will ensure they reach the right internal temperature, 145°F (63°C).
  • Let the BBQ pork chops rest for a few minutes before serving. That allows the juices to redistribute and the meat to become more tender.
