Preheat the oven to 350℉ (180℃). Spray a 9×13-inch baking pan with cooking oil or coat it with a thin layer of butter and set aside.
Peel, core, and slice the apples, then toss them with the lemon juice.
Heat the butter, white sugar, and brown sugar in a saucepan on medium until it all melts.
Then, add the apples with the lemon juice, cinnamon, nutmeg, cornstarch, and vanilla, and stir until well combined. Reduce the heat and let it cook for about 7 minutes or until the apples are firm but tender.
Remove the apple filling from the stove, let it cool slightly, and pour it into the greased baking dish.
The Biscuit Cobbler Topping
Mix the dry ingredients: flour, sugar, salt, baking powder, and baking soda in a large bowl.
Add butter, and mix it with your hands until it resembles coarse crumbs.
Gently stir in the buttermilk until everything is moist, being careful not to overwork the dough.
Scoop the dough by spoonfuls and spread it over the apple pie filling evenly across the pan. Sprinkle the top with crystallized ginger.
Bake at 350℉ (180℃) for 40-45 minutes or until the biscuits are cooked through and the filling is bubbly. Remove and let it cool slightly for serving with vanilla ice cream or whipped cream.
