Ingredients

Coca-Cola Cake

  • 2 cups (240g) all-purpose flour
  • 2 cups (400g) sugar
  • 1 teaspoon (6g) baking soda
  • ½ teaspoon (2-3g) salt
  • ½ teaspoon (3g) ground cinnamon (optional)
  • 3 cups (709ml) Coca-Cola
  • 1 cup (227g) butter, cubed
  • cup (35g) cocoa powder
  • 2 large eggs at room temperature
  • ½ cup (120ml) buttermilk at room temperature
  • 1 teaspoon (5ml) vanilla extract

Coca-Cola Frosting

  • 1 cup (236ml) Coca-Cola
  • ½ cup (113g) butter, cubed
  • cup (35g) unsweetened cocoa powder
  • 4 cups (500g) confectioners' sugar, sifted
  • teaspoon (<1g) salt

Instructions

Coca-Cola Cake

  • Preheat oven to 350℉ (175℃).
  • In a large bowl, whisk flour, sugar, baking soda, salt, and cinnamon (if using).
  • Pour the Coca-Cola into a small saucepan and cook for about 15 minutes until it reduces to 1½ cups.
  • Add butter and cocoa powder. Bring to barely a boil, stirring occasionally.
  • Stir the Coca-Cola mixture into the flour mixture until just combined.
  • In a small bowl, whisk the eggs, buttermilk, and vanilla, then stir them into the Coca-Cola batter until just combined.
  • Transfer the batter to a greased 9"x13" baking pan and bake for 25-30 minutes. A toothpick inserted in the center should come out clean.

Coca-Cola Frosting

  • While the cake is baking, pour Coca-Cola into a small saucepan and simmer until reduced to ½ cup (about 10 minutes). Stir in butter, salt, and cocoa until the butter melts. Remove from heat.
  • Stir in the confectioners' sugar until the glaze is smooth. Pour immediately over the hot cake.

Notes

  • If the glaze is too thick, add a little more Coca-Cola (a teaspoon at a time) until it reaches the desired consistency. If it's too thin, add a bit more sifted confectioners' sugar.
  • Warm the eggs and buttermilk to room temperature because it creates a smoother batter.
  • Please don't use flat soda because bubbles lighten up the cake.
