Ingredients

  • 4 ounces (113g) ginger root (about 1 cup chopped and peeled)
  • 14-16 leaves fresh mint
  • 6-7 cups (1.5-1.7L) water (adjust to the desired strength with more or less)
  • 2 large lemons, juiced
  • 1 cup (200g) white sugar or honey

Instructions

  • Optionally peel the ginger using a spoon to remove the skin.
  • Crush mint in a small bowl with a small mortar and pestle (I used a wooden lemon juicer), and set aside.
  • Chop the ginger into chunks, small enough to blend easily in a blender or food processor.
  • Bring 5 cups of water to a boil in a kettle or pot.
  • While the water is heating, puree the ginger with one cup of water in a blender or food processor until the ginger is thick and pasty.
  • Remove the pot of water from the heat, add the ginger paste and mint, and stir well.
  • Strain the mixture through a cheesecloth over a large glass pitcher, then squeeze the juice from the ginger paste into the pitcher. Discard the remaining pulp.
  • Stir in the lemon juice and sugar until the sugar dissolves, and serve garnished with mint leaves.
  • Serve it over ice or hot in a mug.

Notes

  • You can juice fresh organic ginger using an electric juicer. There's no need to peel it, as the juicer will extract the juice from the skin and pulp.
  • The no-electricity version is to grate the ginger with a hand grater into a cheesecloth-lined bowl. Squeeze the juice out of the grated ginger and add water to taste.
  • For a small amount of ginger juice (salad dressing or one cup op tea), you can use a garlic press. Just peel and cut a small piece of ginger to fit inside the garlic press and squeeze.
