Instructions
Gravy With Drippings
Heat a saucepan or skillet with turkey fat or butter over a medium-high heat.
Gently whisk in the flour to make a roux. Cook for 2-3 minutes to remove the raw taste of the flour.
Gradually add about a ¼ of the drippings and continue whisking until the mixture is thickened and smooth.
Then add the remaining drippings and stock, adjusting the consistency to the preferred thickness—season with bouillon, salt, and pepper. Remember, gravy thickens as it cools.
Gravy Without Drippings
Melt the butter in a skillet or saucepan over medium-high heat.
Then add the onion and saute until it just starts turning brown.
Gently whisk in the flour into the onion mixture to make a roux. Stir it for 2-3 minutes to remove the flour's raw taste.
Gradually add about a ¼ or more of stock, and continue whisking until the mixture thickens and becomes smooth.
Add the remaining stock, adjusting the consistency to your personal preference. Adjust seasoning with bouillon, salt, and pepper. Remember, gravy thickens as it cools.
Notes
To season to taste, take a clean spoon and taste it. If it tastes bland, add a pinch of salt, stir, and taste again. It shouldn't be salty, but the flavor should be there.
If, in spite of all your efforts, the gravy is lumpy, blitz it with an immersion blender. No one will have to know.
For gluten-free gravy, simply replace the flour with 3 tablespoons of cornstarch.
