Ingredients

  • 1 cup (60ml) apple cider
  • 1 750ml-bottle dry red wine (see notes)
  • ¼ cup (50g) brown sugar (optional)
  • 2 cinnamon sticks
  • 1 orange, sliced
  • 3 whole allspice berries
  • 5 whole cloves
  • ½ whole nutmeg, freshly grated
  • 1-2 whole cardamom seeds, crushed
  • 3 star anise seeds

Instructions

  • Combine the apple cider, wine, brown sugar, cinnamon sticks, orange slices, juices, allspice, cloves, nutmeg, cardamom, and star anise in a medium saucepan.
  • Simmer over very low heat for 10 minutes. Not long enough to cook the alcohol out, just enough time to allow flavors to meld together.
  • Strain out the spices and serve hot, garnished with orange peels and cinnamon sticks.

Notes

  • Good wine choices in merlot, pinot noir, malbec, or a blend of your favorite dry red wines. No need to go expensive on this one.
  • Keep it at a low simmer and avoid boiling your beverage as it evaporates the alcohol and brings the bitterness out of the spices.
  • Feel free to replace the apple cider with more wine, or leave it out if desired.
