2cups (500g) passion fruit puree(about 8 passion fruits per cup)
½cup (120ml) lemon juice,freshly squeezed
cold water as needed
ice cubes
1cup (240ml) sweet sparkling wine(optional)
Instructions
Simple Syrup
In a medium saucepan, combine the sugar and water. Bring it to a boil over medium heat, stirring constantly.
Reduce heat to low and simmer for 5-7 minutes or until the sugar completely dissolves.
Remove the saucepan from the heat and stir in the chopped mint if desired.
Let the simple syrup cool completely before using.
Pineapple Passion Fruit Lemonade
Puree the pineapple in a blender until smooth. Then, pour the pureed pineapple into a large pitcher.
Add the passion fruit puree, lemon juice, and simple syrup to taste. Stir well to combine.
Add sweet sparkling wine if desired.
Adjust the strength of the lemonade with cold water as needed.
Chill the lemonade for at least 1 hour before serving, or pour over ice cubes.
Notes
For sweeter lemonade, add more simple syrup to taste. For tarter lemonade, add more lemon or lime juice.
If you can't find passion fruit puree, use fresh passion fruit instead. Puree in the blender until smooth. Straining is optional for aesthetics and drinking ease.
