Pineapple Salsa

Ingredients

  • 1 large pineapple, diced
  • 1 red onion, diced
  • 2 tablespoons (10g) jalapeno, small dice
  • 3 tablespoons (3g) fresh cilantro, chopped
  • ½ cup (120ml) fresh lime juice
  • 2 teaspoons (4g) lime zest
  • 2 teaspoons (14g) honey
  • ¼ teaspoon (0.5-1g) chili powder
  • salt and pepper to taste

Instructions

  • Mix all the ingredient together and chill for 30 minutes so the flavors can meld.

Notes

  • In a large mixing bowl, combine pineapple, red onion, jalapeno, cilantro, lime juice, lime zest, honey, chili powder, salt, and pepper. Mix until all ingredients are evenly incorporated.
  • Cover and place in the refrigerator for at least 1 hour. The longer the better. Lasts in the refrigerator for up to 4 days. Serve with broiled salmon
