Line a baking sheet appropriate for smoking with aluminum foil, and set aside.
Remove the tough outer leaves of the cabbage if needed, place it on a cutting board, and cut it in half from top to bottom. Carefully cut out the core.
Cut each half into quarters lengthwise, and slice the quarters in half for 8 wedges. Transfer the wedges to the baking sheet.
Preheat the smoker per the manufacturer's instructions to 225-250°F (107-120℉).
Heat the olive oil, garlic, thyme, salt, black pepper, and Creole seasoning in a small saucepan. Stir for about 30 seconds so the flavors can bloom, then brush the seasoned olive oil mixture over the cabbage wedges, coating every inch.
Optionally marinate the cabbage for about 15 minutes, then place the baking sheet in the smoker.
Close the smoker and smoke the cabbage for 1-1½ hours or until it's tender and lightly charred on the edges. How long it takes will vary according to the thickness of the wedges. Flip them over around halfway through for even cooking.
Once the wedges are tender, transfer them from the smoker to a serving platter.
Garnish with crumbled bacon if desired. Drizzle with the remoulade, and serve immediately with extra sauce on the side.
